Roasted Pork Chops with Apples and Onions

Ingredients

Serves 2

  • 2, pasture-raised pork chops (rib, shoulder, loin, and country ribs will all work)
  • 1 Tbsp salt
  • 1 tsp pepper
  • 3 tsp sage
  • 1 Tbsp olive oil
  • 1/3 c apple cider or juice
  • 1 tart apple, sliced but not peeled
  • 1 small onion, thinly sliced
  • 2 Tbsp honey

Directions

  1. Preheat the oven to 350 degrees
  2. Combine the salt, pepper, and sage; rub into the meat
  3. Heat olive oil in an ovenproof skillet over medium heat and sear the chops until browned (about 1 min per side)
  4. Remove from heat; add cider, apple, and onion.
  5. Drizzle with honey, cover and roast for 1.5 hrs or until fork tender
